Thank you, Mom!

Tonight was mother daughter bonding time. As the life in my apartment slowly inches closer, my mother realizes I should utilize my kitchen and make my own food as a way to save money and eat healthier. Where this dish may not exactly be healthy though… it sure is delish! My mother decided to teach me her recipe on how to make Chicken Cordon Blue with a nice cheese sauce and veggies!

Chicken Cordon Blue:

  • First pull out the boneless breast chicken (1.99 lb) and place it between two layers or saran wrap.
  • You then beat it (literally….) until it is nice, tender, and wide/long.
  • Following that, you place (depending on how big the chicken) a piece to two pieces of swiss cheese and deli sliced ham.
  • Next, roll up the chicken, ham, and cheese in a spiral roll, somewhat like a chocolate swiss cake treat! 😉
  • Place them in a glass/oven safe pan and sprinkle bread crumbs over the top.
  • Bake in the oven at 375* for 40-45 minutes.

Cheese Sauce.

  • Put 2 tablespoons of butter into a sauce pan and let melt, add a quarter cup  of milk and let melt.
  • Next, add a cup to a cup and a half of shredded Parmesan cheese and stir with a whisk.
  • Once reduced to a creamy sauce, add a dash of salt and pepper.

Finally, the steamed Veggies!

  • Chop up a few broccoli stalks, about 1-2 carrots, and add some cauliflower chunks to the mix.
  • Let steam for 15-20 minutes on burner with about a tablespoon of butter.
  • Add some McCormick Grill Seasonings (mmm tasty- or whichever seasons you prefer)

Finally, a delicious meal, along with some good ol’ gal bonding time with my mom. 🙂
