Carrot Cake Cupcakes for Collegiate Creative! 100th Post!

Wow, that’s a lot of C’s. More importantly, that’s a lot of posts! This is Collegiate Creative’s 100th post so far and I like to celebrate milestones. Naturally, I celebrate with food so I picked a recipe that would make the most sense 🙂 This Carrot Cake Cupcake turned out so great and my housemates enjoyed it so very much! It makes my day when things turn out good 🙂

It’s been quite a journey keeping up with this blog as consistent as I have been but I enjoy it so very much. When people I see in real life mention how they read my posts or when one of my friends offhandedly says “That’s so Collegiate Creative!”, it makes my day. Thank you all for reading and stay tuned for much much more! Let’s see what happens in a year 🙂

Carrot Cake Cupcakes

My mother’s carrot cake recipe calls for pineapple, which is different from other classic carrot cakes but makes it so much tastier!

Mix the dry ingredients together in a large bowl- flour, sugar, baking soda, baking powder, and cinnamon

Grate the carrots- I was really snooty and traveled out to the organic store to get these carrots. I just think they taste so much sweeter and are better for baking cupcakes.

Mix all of the ingredients in with the dry- stir until it looks… well, frankly looks awful.

See what I mean? Divide this up into 24 baking cups or you could make 2 9″ rounds for a full cake. Bake in a 350* oven for 20 minutes for cupcakes, probably 35-40 minutes for cake.

Ariane the wonderful helped me with this delicious cream cheese frosting!

  • 1 stick Cream Cheese, softened
  • 1 cup (ish) Powdered Sugar
  • 1 tsp Vanilla
  • Drizzle of heavy cream (or Milk or whatever you have)
  1. Beat the cream cheese until light and fluffy
  2. Shake in powdered sugar while running the beater, mixing in gradually. Taste it so you know it’s good and done!
  3. When the powdered sugar is mixed in, add the vanilla and cream to thin it out.
  4. Enjoy the wonderfulness of cream cheese frosting!
