Bread Bowl Bliss: Corn and Cheddar Cheese Chowder

Yay for the C alliterations! Corn and Cheddar Cheese Chowder on Collegiate Creative! Man, that’s exhausting. I’m super cozy and sleepy after this delicious and warming chowder found on Pioneer Woman‘s blog, a recipe that looked so delicious and homey that I just had to take a trip to Publix for the bell peppers and cheese on sale.

Okay, so the bread bowl is a bit of a splurge, but its crispy sourdough crust had me at first sight! My mother would scorn me if she knew I paid $2.50 for a small ball of bread, but I know that all would be forgotten if she tried this unbelievably creamy and delicious corn chowder. I’m going to be putting up a lot of soups in the next couple of months as the weather drops into the 50s, but if you try any of them, take a look at this one first!

Corn and Cheddar Cheese Chowder

I’m not a fan of the bacon, this soup is already rich and delicious- thank you Pioneer Woman!

  • 4 Tablespoons (1/2 Stick) Butter
  • 1 whole Onion, Chopped
  • 3 slices Bacon, Cut Into Pieces
  • 3 whole Bell Peppers, Finely Diced (red, Yellow, Orange)
  • 5 ears Corn, Kernels Sliced Off
  • 1/4 cup All-purpose Flour
  • 3 cups Chicken Stock Or Broth
  • 2 cups Half-and-half
  • 1 cup (heaping) Grated Monterey Jack
  • 1 cup (heaping) Medium Cheddar Cheese
  • 1/3 cup Sliced Green Onions
  • Bread Bowls
  1. In a large pot, melt butter over medium-high heat. Cook onions for a couple of minutes. Add bacon and cook for another minute or so, then add diced bell peppers and cook for a couple of minutes. Finally, add corn and cook for a minute.
  2. Sprinkle flour evenly over the top and stir to combine. Pour in broth and stir well. Allow this to thicken for 3 or 4 minutes, then reduce heat to low. Stir in half-and-half, then cover and allow to simmer/thicken for 15 minutes or so.
  3. Stir in cheeses and green onions. When cheese is melted and the soup is hot, check seasonings. Add salt and pepper as needed.
  4. Ladle into hollowed out boules and serve immediately.
