Switching Up the Carbs: Vegetable Fried Quinoa

I’m working on this thing where I am not eating as many carbs and quinoa is a great solution. Okay, so it may be a carbohydrate, but it’s packed with protein and has more nutritious value than, say, rice. It can be a great substitute than the empty calories that are rice! In this recipe, I kind of went out on a limb, but it actually tasted pretty good! Yay everyone wins!

Quinoa Fried Rice

  • 3 tbs olive oil
  • 1 small onion, minced
  • 2 small carrots, chopped
  • 1 egg
  • 1 cup cooked quinoa
  • 3 tbs low- sodium soy sauce
  1. In a medium saucepan, heat the olive oil. Saute the carrots and onions for 10 minutes or until the onions are soft and translucent.
  2. Crack the egg into the pan and scramble quickly. When the egg is cooked, toss in cooked quinoa and heat through.
  3. Pour in soy sauce and stir- pan fry for 10 minutes
  4. Enjoy!
