Dip it Good: Greek Veggie Dip

Dip is my weakness. Chips seem to disappear with salsa, crackers vanish in the presence of ranch dip and vegetables can never seem to stick with hummus! It’s kind of a problem.

This dip, however, is a great healthy alternative to the standard sour cream and ranch packet mixture (however delicious that may be sometimes). I know that vegetables like tomatoes and cucumbers aren’t at their prime this time of year, but Publix had a buy one get one on feta so I felt inclined to make this…

Greek Veggie Dip

This dip is ridiculously tasty, don’t feel too bad if you can’t stop eating it. Some people like it with olives, but I’m not the biggest fan

  • 1 cup plain greek yogurt
  • 2 tbs lemon juice
  • Salt and pepper, to taste
  • 1 medium tomato, chopped
  • 1 medium cucumber, de-seeded and cubed
  • 1/2 cup feta cheese (you can buy it crumbled but you get a better deal if it is in a block and then you cube it!)
  1. Mix together yogurt, lemon and salt and pepper. Spread in a shallow serving dish.
  2. Spread feta cheese out into an even layer, top with tomatoes and cucumbers
  3. Season with salt and pepper and serve with crackers! Enjoy!
