Sun and Fun: Lemon Kiss Cupcakes with Whipped Cream Frosting

Ready for a super easy cupcake recipe that will get you a zillion compliments at a summer brunch. Or a party that you wear a sun dress to. Or maybe even late at night when you’re in your PJ’s.

I’m a little tired. Amongst the final projects for the end of the semester, I’m a little bleary-eyed.

Anyway, try these cupcakes because they are absolutely delightful and will lead you to make friends. I promise.

Lemon Kiss Cupcakes with Whipped Cream Frosting

  • 1 package white cake mix (plus the ingredients it calls for- oil, water and eggs!)
  • 1 cup sour cream
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup lemon juice plus 2 tablespoons
  1. Preheat oven to 360°
  2. In a small saucepan, combine water, sugar and lemon juice (not the 2 tbs!) and bring to a boil. This will make a simple syrup! Let mix cool to room temperature
  3. Mix together the cake mix, sour cream plus the ingredients the box calls for.
  4. Pour half of the simple syrup into the cake mix plus the 2 tablespoons of pure lemon juice
  5. Spoon  batter into a muffin tin (about 1/4 cup of batter each cupcake) and bake for 12-15 minutes or until tops are lightly golden brown

Whipped Cream Frosting

  • 2 cups heavy whipping cream
  • 2 cups confectioner’s sugar
  • 1 tbs vanilla extract
  1. Pour whipping cream and vanilla into a medium bowl
  2. Using a hand mixer, beat the whipping cream on high speed. The cream is ready when it makes stiff peaks, about 5 minutes
  3. Fold in confectioner’s sugar using a rubber spatula
  4. Scoop frosting onto cupcakes – don’t pipe it on, the point is that it is light and fresh!
