Happy Mother’s Day! Easy Strawberry Shortcake

Yeah, I totally have the best mom ever. Haters can hate, but I really do. She sends me cards in the mail congratulating me on making the Dean’s List and boxes with cupcake decorations for Easter. She really is the most amazing woman and I’m proud to call her my mommy! Naturally, I need to make her a delicious dessert to end Mother’s Day.

This Strawberry Shortcake is so so easy and super delicious, you can make this for mom or just for yourself! The savory and crunchy biscuit paired with fresh whipped cream and strawberries is just amazing. Look below for the recipe!

Easy Strawberry Shortcake

For Strawberry Filling:

  • 1 qt California Strawberries (Okay, they don’t have to be Californian but they are the best!)
  • 1/2 cup Sugar

For Shortcake:

  • 2 1/3 cup Bisquick Baking Mix
  • 2/3 cup Milk
  • 3 tbs Sugar
  • 3 tbs Butter, melted

For Topping:

  • 1 pt Cold Heavy Whipping Cream
  • 1/3 cup Sugar
  1. Preheat oven to 425°
  2. In a medium bowl, mix together all shortcake ingredients. Stir, but not too much! Just until it all comes together. Over-stirring anything that’s a dough will result in stiff shortcakes instead of perfectly light and airy!
  3. Drop 6 sections of dough onto a parchment-lined baking sheet- I gently formed mine into hearts for mother’s day!
  4. Bake for 10-12 minutes or until golden brown!
  5. Meanwhile, core and slice the strawberries and toss them in the sugar. Set aside.
  6. For the topping- using a hand or stand mixer (or good ol’ fashioned arm power!), whip the cream on high speed. When the cream begins to stiffen, slowly pour the sugar into the cream and continue whipping until stiff peaks form. 
  7. To assemble, slice the shortcake so you get a top and bottom. Spread cream along the bottom half and top with berries. Then, put the top shortcake on and top with a little more cream and berries! 
  8. Enjoy!
