April is for Showers, June is for Downpours: Roasted Tomato Pasta Sauce

In Florida, rain during the summer is a part of life. Rain boots are a must, the mini umbrella is a staple in most packpacks, and the freak monsoon is never too unexpected. See, unlike most, I’m a fan of rainy days- my bed is comfy and Mad Men keeps me company. In order to keep cozy, spaghetti dinner with friends is a great solution and what better way to make spaghetti special than to make your own sauce!

Check out this super delicious and easy (and healthy!) way to make pasta sauce that you can enjoy even when it’s sunny 🙂

Roasted Tomato Pasta Sauce

When summer rolls around and you’ve got lots of tomatoes on sale at the farmer’s market, try this making this sauce for a wow-worthy dinner with friends!

  • 4 lbs roma tomatoes (ask for ‘seconds’ at the farmers market, they are just tomatoes that aren’t pretty enough to sell, but they will do well roasting!)
  • 2 large onions
  • 4 heads garlic, separated into peeled cloves
  • Olive oil
  • Salt and Pepper
  1. Preheat the oven to 300°F.
  2. Line two baking sheets with parchment paper or aluminum foil. Slice tomatoes in half lengthwise and arrange with the flat side up.
  3. Cut onions roughly, smaller than quarters but keep large chunks together. Arrange onion chunks and garlic within the tomatoes and rub with olive oil.
  4. Sprinkle with salt and pepper and bake for 3-3 1/2 hours or until fragrant and tender. Roasting is fun because no matter what goes in the oven, beautiful things come out 🙂
  5. Pour the deliciousness into a large pot on low heat and take an emulsion blender and puree until smooth. Pour in olive oil if the consistency seems too thick.
  6. Season with salt and pepper and italian seasoning if desired
  7. Gather a couple of friends and pair sauce with hot spaghetti! Have them bring bread and salad and a bottle of wine 🙂 What a great night!
