Why I Love Tropical Storms: Grilled Goat Cheese Sandwich and Tomato Soup

I seem to be the only one in Florida that truly enjoys a good storm. I love it when it rains nonstop all day and I have work to do at home and all the ingredients to make soup are in my pantry. This tropical storm calls for a classic grilled cheese and tomato soup! But when it comes to me and my kitchen, nothing is simple 🙂

So I whipped up some beautiful Roasted Tomato and Quinoa Soup and with the beautiful bread I bought from a really cute boy at Au Peche Mignon in Market Square. Can you believe Tallahassee, FL has a French Pastry Shop? Yeah, we didn’t believe it either until the whole wheat mountain bread became my grilled cheeese. With goat cheese. No big deal.

The Perfect Grilled Cheese

Cheese inside bread is just a beautiful idea, especially when you add different types of cheese!

  • Butter (the amount depends on you!)
  • 2 slices of good bread – sourdough, fresh mountain bread
  • 1 tbs goat cheese
  • 1/4 cup cheddar cheese
  • 1/4 cup mozzarella cheese
  1. Heat a George Forman grill or a grill pan until medium-hot.
  2. Butter both sides of the bread and spread goat cheese on one of the slices
  3. Top the cheese with the rest of the cheese and put the other bread slice on top of the glorious mountain of cheesy goodness
  4. Put the sandwich in the grill and press down or put in the grill pan and let the beauty just happen.
  5. You will know when it’s ready. You will know.
  6. Serve with Roasted Tomato and Quinoa Soup!
